  7.     THANKS, BUT WE'LL HAVE THE CHOCOLATE CHIP FUDGE SWIRL. The
  8. U.S. Department of Agriculture has announced the development of
  9. Oatrim, an oat-bran extract that can serve as a fat substitute
  10. in desserts and other foods. This dismayed Murtaugh/Match, a
  11. small Wisconsin food-consulting firm that claims to hold the
  12. patent on oat bran-based frozen desserts. Explains Timothy
  13. Murtaugh: "We take advantage of the creamy, smooth texture of
  14. oats once they are cooked, like oatmeal." Says a USDA patent
  15. adviser: "We feel there's an opportunity for both to be allowed
  16. and licensed within their own commercial niches."
